In Quindío, Colombia, Edwin Noreña's Finca Campo Hermoso is a place where coffee innovation and tradition come together. As a third-generation coffee producer with deep expertise in agro-industrial engineering, Q-Grading, and coffee judging, Edwin has turned his farm into a hub for coffee research and development. With his team, he’s constantly pushing the boundaries of what coffee can be.
The processing of this coffee is truly unique, involving two carefully controlled fermentation stages. It begins with a low-oxygen, in-cherry fermentation, where the natural cherry juices, known as mosto, are collected. With the distinct golden-yellow color that comes from the parchment in the Pink Bourbon variety, Edwin has fittingly named this experimental method "Gold Washed."
In the second stage, this golden mosto is filtered and combined with lactic bacteria before being reintroduced to the de-pulped coffee beans. This kicks off a five-day anaerobic fermentation, during which the lactic bacteria consume the sugars from the cherries, creating NADH—a compound that stores energy in the coffee seeds.
This is our fifth time sharing one of Edwin's coffees. The first was in 2021, and the response was incredible. Back then, this kind of processing wasn’t as common, and not everyone was on board with Edwin's bold experimentation. That makes it all the more exciting to work together again and bring you something special. We hope you enjoy it!
