The name itself translates to “large old village,” a fitting name for a community surrounded by long-established Pa-O villages in the mountains of Hopong Township. Today, 75 producer families are helping shape what this coffee can be as the village continues its transition into specialty coffee production.  ￼\u003c\/p\u003e\n\u003cp\u003eThis coffee comes from the steep slopes of the Indigo Mountain range, where cool conditions and high elevation help create a cup that feels delicate, layered, and expressive. Cherries are processed as a dry natural and typically spend 18 to 22 days drying, depending on the conditions during harvest. That slower, careful approach helps give the coffee its soft fruit character and gentle sweetness.  ￼\u003c\/p\u003e\n\u003cp\u003eWhat makes this coffee especially meaningful to us is the larger context around it. Done Li Tan is part of a growing model built through Indigo Mountain co-op, which was created to support communities moving away from poppy farming and toward specialty coffee as a more stable future. It’s still early for this village in that shift, and that makes coffees like this feel important. \u003c\/p\u003e\n\u003cp\u003eA little more context on the community itself: Done Li Tan is made up of Pa-O producers, an ethnic group with a long history in Shan State and a strong cultural presence throughout the region. Hopong, where this coffee is grown, is an important center for Pa-O life and is surrounded by mountain landscapes, forests, caves, and ancient pagodas.
