Most decaf coffees aren’t selected for quality. They’re chosen because they didn’t make the cut. This one is different. It comes from smallholders throughout southern and western Huila, who grow everything from Castillo to Pink Bourbon, and whose small lots are blended to produce a high quality coffee that can be used in a variety of ways.
These are small-scale producers, many organic or transitioning to organic, farming between 1450 and 2000 meters above sea level.
The coffee was sent for decaffeination using the water process, a 100% chemical-free method of decaffeinating coffee using only water, temperature, and time to remove 99.9% of caffeine. As a result, there's no lingering "processed" or chemical aftertaste.
