Every winter we pretend Gainesville gets chilly. The closest we get to frost is when someone forgets to close the walk-in properly. So we made a seasonal blend that leans into the joke. It tastes like holiday cheer, palm-tree lights, cozy cardigans, and Santa hats you absolutely do not need in 85 degree weather.

This year’s version brings together two places we care a lot about. 75% comes from Agua Mariposa in the Sierra Mazateca of Oaxaca. It is a small Mazatec community where older generations still speak primarily Mazatec and younger generations move between Mazatec and Spanish. 26 smallholders contribute coffee from tiny plots, often just 75 kilograms at a time. Their washed process typically ferments 36 to 48 hours and dries slowly on petates due to the region’s cooler, misty afternoons. These details shape a clean, balanced structure that anchors the blend.  

The remaining 25% is a natural lot from Bookkisa in Guji, Ethiopia, produced by smallholders who deliver to the Sawana drying station. Coffee here grows in fully or semi-forested systems with lower planting density, often in garden-style plots alongside subsistence crops. The Sawana station was built in 2022 and works with about 30 producers in the area, all delivering organically grown cherry. Elevation sits between 2,000 and 2,150 masl, bringing brightness and clarity to the cup.  

Together they create a cup that feels festive without being sugary or over the top. Clean fruit from Ethiopia. Smooth structure from Oaxaca. Florida winter energy through and through. Perfect for the season, even if the season insists on staying warm.
