We only met María briefly, but the impression she left was clear. While Noe was in Peru, he got to meet her at the cupping lab run by Alpes Andinos. What stood out wasn’t just the coffee, but the persistence. María kept bringing new lots to the table: same variety, different fermentations; same process, slightly longer drying. Again and again, she returned with micro-adjustments, each time asking for feedback, each time looking for a better understanding of what the coffee could be.

Eric, who leads quality control for Alpes, shared how consistent she’s been and how determined she is to keep improving. That effort shows. María Nieves has quickly become a well-known name in Cajamarca, and her coffees are beginning to circulate among some of the best roasters in the world.

This washed Gesha comes from Finca El Chin Chin, her farm in Barro Negro, La Coipa. It was harvested by María, her husband, and a few neighbors from the same caserío, and then carefully washed and drained before beginning fermentation: four nights in cherry inside GrainPro bags, held in sealed plastic barrels; then pulped and fermented another three nights before being washed three times and transferred to raised solar beds to dry for twelve days.
