One of our favorite details about this coffee is that Gloria Cecilia Sepúlveda shares the land she farms with her cousin. That cousin happens to be Carmen Montoya, a Cup of Excellence winner who’s been working with Chiroso since 2014. At El Porvenir, their one-hectare farm in Urrao, Carmen has helped Gloria fine-tune the way she processes her coffee.
Gloria grew up around coffee and kept farming while raising her kids. Coffee helped pay for their education, and she hopes to keep the family tradition going by getting even better at the part she loves: processing. For this washed Chiroso, the cherries are picked and sorted by hand. Gloria removes the fruit right away and adds fresh batches to open tanks as the picking continues. The coffee ferments for 36 hours before it’s washed.
The first sip reminded us of black iced tea. As it cooled, the apricot got sweeter and jammier, and the finish had that soft vanilla sweetness you get from the last spoonful of melted ice cream. We kept going back to the cup to see what would come through next.
Huge thanks to Unblended for introducing us to Gloria’s coffee.
